The Cheesecake Factory Kitchen Manager

Our Kitchen Managers are responsible for ensuring great food quality and recipe adherence throughout the shift. This includes all kitchen functions on an opening, mid or closing shift to include food quality management, housekeeping, kitchen set-up, sanitation, safety, pace and supervision of kitchen staff. In addition each Kitchen Manager will be assigned a particular work group to manage. A typical work group consists of 2 to 4 Prep Cooks and/or Line Cooks. The Kitchen Manager also has contributory financial responsibility for food costs, labor cots and kitchen supplies for the kitchen.

Food Quality:

  • Ensure all food is properly prepared and to the standards set by the company by conducting daily line checks, food reviews and recipes of the day.
  • Ensures that clear feedback is provided to the entire kitchen team, including staff and management.

Cleanliness and Safety:

  • Ensures the cleanliness of the kitchen by maintaining to specified standards, passing Health Department audits with a 90% or better and training staff on proper sanitation guidelines.
  • Conduct monthly housekeeping, food safety and sanitation reviews to improve restaurant standards and correct deficiencies on a timely basis.

Leadership:

  • Manages assigned staff, including scheduling and ongoing training and professional development.
  • Evaluates the quality, care and morale of the staff and strives to improve these areas through solid communication, care with schedule-writing and work group leadership.

Budgets and inventory:

  • Is responsible for achieving or exceeding the written restaurant budgets for the work unit (i.e., food cost, food efficiencies, labor cost and direct kitchen expenses).
  • Sets operational goals and follow-up plans for the work unit. Directs and holds all work unit staff accountable for those goals. Ensures compliance with inventory procedures.

Qualifications:
Qualifications for our management positions include 2+ years of solid, full service casual or upscale restaurant management experience.
